A Sharquoi render.

"I suspect we are forcing the Humans into a tighter arena than they care to fight in - soon we may be able to use the Sharquoi."
— A cryptic mention of the Sharquoi just before the Battle of Earth.[1]

The Sharquoi is a Covenant unit known for its herculean strength.

Description

The Sharquoi are described as an enormous species that are kept contained and segregated from other Covenant forces.[2][note 1] Possessing phenomenal strength, they are often used to smash enemy vehicles and were deemed so dangerous that they were not deployed during the Human-Covenant War, though near the end a Sangheili expressed to one of his comrades that humanity's corralling following the Fall of Reach may allow them to be used soon.[1]

A Sharquoi as it appeared in an early-development version of Halo: Combat Evolved.
How about this for a Halo 2 creature you've never heard of before: a Drinol Beast, a sort of hairless, gray monster with one eye - although there are other drawings of it with two eyes so you can't take for granted that it's going to make the final game.[3]

The Drinol, as it was known back then[4], was planned to be in the third-person shooter version of Halo prior to Bungie's migration to the Xbox market.[5] Though modelled and animated during the development of Halo, the Drinol was cut from the game for reasons unknown.[6] It was later planned to be included in Halo 2, where it is now renamed as the Sharquoi, but was eventually removed from the game once again. It was included as a brief mention in Conversations from the Universe.

The Drinol was a reference to the Drinniol from Marathon, an enemy unit referred by UESC Marathon crew as Hulks. Similarly, the character design as well as its description and combat abilities are inspired by the Drinniol.
