Stalks are a type of biological structure grown in areas of high Flood infestation. Their precise functions to the parasite are unknown, though they seem to consist of larger growths on which several blisters are grown. When disturbed, the blisters on the stalk explode and release various infection forms - predominantly spore clouds and pod infectors.[1]

Halo Wars
Flood Stalks appear as a Flood structure in Halo Wars. When destroyed, it releases a couple of groups of infection forms. Like Flood Eggs, stalks are benign and only act when harmed. However, unlike the eggs they do not drop resources when destroyed - leaving little reason to attack them.
Trivia
The Rebel Leader skull on the Halo Wars level The Flood requires the player to kill 20 Flood Stalks.
